Apple Cider Challah

Apple Cider Challah

This challah features the flavors of apple cider and honey, making it the perfect bread for Rosh Hashanah.

1 package dry yeast
1 c warm apple cider
5 c flour
¾ cup dried apple, chopped well
⅓ c sugar
2 tsp kosher salt
¼ c neutral oil, e.g. canola
2 large eggs plus 1 egg yolk
1 Tbs honey, beaten with 1 tsp canola oil for “wash”

In a small mixing bowl, whisk yeast into warm cider. Set aside.

Measure dry ingredients (including dry apples) into another large mixing bowl. Stir with a wooden spoon, and make a well in the middle.

Whisk in 2 eggs plus 1 egg yolk and oil into yeast/cider mixture. Pour wet ingredients into dry (into well in center), and stir with wooden spoon. Dough should be soft and sticky. Turn onto floured surface and knead briefly with a little extra flour to prevent dough from sticking to hands.

Put ball of dough back into large mixing bowl and coat with a little oil to prevent sticking. Cover with saran wrap or towel and let rise about 1 hour until doubled in size.

Punch down dough, turn onto floured surface and knead till smooth, about a minute. Divide dough with sharp knife in half, then divide each half into 3. Roll each of 6 lumps into a cylinder, 8-10 inches long.

Place each cylinder on a baking sheet covered with parchment paper. Braid 3 strands from the middle to each end. Pinch ends together and roll under. Repeat for second loaf.

Cover both loaves with oiled saran wrap (re-use from previous covering). Let rise at least an hour, preferably in a warm spot, until doubled in size.

Preheat oven to 375. Brush loaves with honey wash using a pastry brush. Put in middle third of oven and set timer for 15 minutes. Loaves are done when deep golden brown. Depending on oven, this usually takes about 20 minutes but can be shorter if it is a hot oven. I start watching after 15 minutes, checking every 2 minutes or so.

THIS ISN'T BREAD, BUT IT'S A GRAIN REPLACEMENT WITH ALL THE SAME AMINO ACIDS AND MORE
Ernestine's Healthy Raw Granola Recipe
Soak in pure water 1 1/2 cups of each of the following for 24 hours:

Sesame seeds
Sunflower seeds
Oat groats
Pumpkin seeds
Almonds
Walnuts

Rinse, drain, and grind the nuts (with a nut chopper). Mix everything together and add 5 cups of rolled oats.

Next, blend in your Vita-Mix, food processor, or blender:

1 cup olive oil or coconut oil
1 cup raw honey
2 Tbs vanilla

Stir this into the seed, nut, and oat mixture. Add raisins and other favorite dried fruits to taste and then spread onto dehydrator trays for 48 hours.
You can't buy granola as tasty or healthy as this in any store.

This healthy raw granola works great for snacking or for energy boosts during the afternoon blahs if you're stuck in job prison somewhere.

I eat an omnivorous diet. Part of what I practice is in The Recipes for Living Without Disease, part is from The Wheatgrass Book, and part is whatever's handy, local, looks good, smells good, convenient, etc.

This is excellent, Raw 1. The recipe I have for 'Ezekiel Bread' is actually similar, but It is baked. I'd much rather have a 'raw' bread, if it is possible.

Please, do share with us more about what you eat, and recipes. I have NO idea, beyond your every day basics such as salads and an apple here and there. I also like to stick with eating local, and eating seasonal if possible, but it seems like if I go about doing that, that I REALLY restrict myself to what I can eat!!

Breads are nice once a week or so. We have become so addictive in our flood famine society. I like sticking to tree fruit and wild foods most of the week, then once a week sprout grain, then grind it into a sticky glob, form it with my hands into a flat loaf, let dry in the sun or low temperature air blowing dehydrator kitchen appliance. Enjoy this living bread for betterment of health and happiness.

I have one, but don't have a lot of time for digging it up, nor posting about sprouted grains, but I would love to do this, if it isn't done by the time I get back on with some time.

I was diagnosed as being gluten intolerant, and was told to stay clear of certain grains. True, I can't handle barley, at the least cracked or ground (I need to do some tests on this theory, but I think whole at this point, it okay). I have found recently, though, after much study on the subject, that I can handle SPROUTED, flourless breads ("Ezekiel" bread), just fine. I will write more about my thoughts on this subject, and the importance, and 'how to' on sprouted grains and seeds when I can get on.
