What's a combination vegan? I am not vegan, but since Pesach is about symbolism and liberation, I liberate the lamb for the duration of Passover and smear my doorpost with a beetroot 'shank' symbol. They're really good roasted. Strange, eh? I still make the same number of blessings. I enjoy beets. I make a sacrifice by roasting it. I would prefer it raw.
